Note: Although we made these gluten-free, they certainly can be made with regular biscuit dough as well!
One of the fun things about starting a food blog has been finding lots of other great food blogs. This recipe is an adaptation from one The Lucky Wife showed me recently on another food blog. I knew immediately that I wanted to try a version of the recipe. The original did not include walnuts. The Lucky Wife likes for me to add nuts to recipes whenever possible.
The Well-Fed Family really enjoyed these. Translation: they will probably become a regular for us, especially since we are always looking for new breakfast ideas. Hope you like them, too.
Yield: 10-12 biscuits
- 2 1/4 cups all-purpose gluten-free flour
- 3/4 teaspoons Xanthan Gum
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/4 cup butter
- 3/4 cup buttermilk
- 1/2 cup banana, mashed
- 1 teaspoon vanilla
- 1/4 cup walnuts, chopped
- Preheat oven to 350 degrees.
- Mix all dry ingredients together.
- Cut in butter until mixture is crumbly.
- Slowly add buttermilk, banana and vanilla to moisten.
- Hand pat dough out on floured surface. Do not over work dough. If mixture is too wet, add in small amounts of flour until dough can be worked.
- Cut biscuits out with biscuit cutter. (I used a floured glass, rim side down).
- Place biscuits on lightly greased sheet pan and bake approximately 10 to 12 minutes or until golden brown.
