Garlic Bacon Potato Salad
- 3 pounds red potatoes
- 4 tablespoons mayonnaise
- 5 teaspoons minced garlic
- 1/2 teaspoon salt
- 1/4 teaspoon rice wine vinegar
- 4 strips bacon
- 1/4 cup chopped onion
- Boil potatoes whole, skin on, until fork-tender. Remove from water and cool completely.
- Fry bacon until crisp and crumble.
- Cut whole potatoes into quarters and place in large bowl. Â
- Add chopped onion and crumbled bacon.
- In small bowl, combine mayonnaise, garlic, salt and vinegar. Add mixture to potatoes in large bowl and combine thoroughly.
- Taste and adjust salt if needed.
