Garlic Bacon Potato Salad

My spin on a classic… Enjoy.

Garlic Bacon Potato Salad

Ingredients:
  • 3 pounds red potatoes
  • 4 tablespoons mayonnaise
  • 5 teaspoons minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon rice wine vinegar
  • 4 strips bacon
  • 1/4 cup chopped onion
Directions:
  1. Boil potatoes whole, skin on, until fork-tender. Remove from water and cool completely.
  2. Fry bacon until crisp and crumble.
  3. Cut whole potatoes into quarters and place in large bowl. Â
  4. Add chopped onion and crumbled bacon.
  5. In small bowl, combine mayonnaise, garlic, salt and vinegar. Add mixture to potatoes in large bowl and combine thoroughly.
  6. Taste and adjust salt if needed.
