The Lucky Wife’s Favorite Chicken and Dumplings

Today’s recipe comes from The Lucky Wife’s childhood and is her favorite recipe for Chicken and Dumplings. When her mom came to help us out after the birth of The Well-Fed Daughter, this was one of the meals she wanted her to make. The Well-Fed Son is not a big fan of chicken cooked this way, but he sure loves the dumplings.

The Lucky Wife’s Favorite Chicken and Dumplings


Ingredients:
  • 1 whole chicken, cut into 8 pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Bisquick
Directions:

  1. Boil chicken in water seasoned with salt, pepper, onion powder and garlic powder until cooked.
  2. Remove chicken pieces from water and allow to cool until chicken can be handled.
  3. Remove meat from bones and return meat to stock water. Discard skin and bones.
  4. Prepare dumpling recipe as indicated on box of Bisquick.
  5. Bring chicken and stock to a rapid simmer. Drop heaping spoonfuls of dumpling batter directly into simmering stock. Allow to simmer uncovered for approximately 10 minutes.
  6. Cover and simmer approximately 10 more minutes.
  7. Using a wooden spoon, scrape the bottom of the stock pot periodically to loosen dumplings and ensure against sticking.
