Don’t these cupcakes look festive with the red color from the berries? Here’s how to make them:
Ingredients needed:
1 cup Truvia® Baking Blend
2 cups cake flour
3â„4 cup cocoa powder
1 1â„2 tsp baking powder
2 tsp baking soda
1 tsp salt
1â„2 cup canola oil
2 eggs
1 cup skim milk
2 tsp vanilla extract
To make them you will need to preheat your oven to 350 degrees F. Combine all of the dry ingredients in a large bowl. Add the remaining ingredients and mix together on medium speed for 2 minutes. Fill paper-lined or greased cups 2/3 full with the batter. Bake for approximately 20 minutes (all ovens vary) or until a toothpick, when inserted and pulled back out, comes out clean. Remove from cups and allow to cool on a cooling rack for a minimum of 10 minutes. Add topping or frosting of desired.
*This cupcake has 140 calories and 6 grams of sugar per serving as compared to a full sugar cupcake that has 200 calories and 21 grams of sugar per serving.
