Mango Peach Dessert Soup Recipe ~ Crock-Pot Sunday

Peaches. We eat a lot of them in our home, and The Well-Fed Kids are completely satisfied with eating them straight out of the jar every day.

We buy them packed in 100% juice, without heavy syrup. After having them that way, we would never go back to eating them the other way. The syrup totally compromises the delicious natural flavor of the peaches!

I was looking through this cookbook recently:

And I found a recipe called Apricot-Peach Dessert Soup. It sounded delicious as written, however, as I read the ingredients I decided to adapt it a little based on flavor elements we use more regularly, mainly mango.

This was my first time having a dessert soup. It was a big hit with The Well-Fed Son. The Chef doesn’t eat a lot of fruits and has not tried it yet. Because it was something new, The Well-Fed Daughter had no interest in trying it.  I’m pretty sure she’ll come around. It was quite delicious and we will definitely be having it again.

Mango Peach Dessert Soup Recipe

Ingredients

  • 4 cups mango juice (We used Ceres brand mango-pear blend)
  • 1 16-ounce package frozen unsweetened peach slices
  • 1 cup dried mango, cut into bite-size pieces
  • 1 6-ounce package dried cherries
  • 6 inches stick cinnamon

Instructions

  1. In a 3 1/2 or 4-quart slow cooker, combine the mango juice, frozen peaches, dried mango, dried cherries and cinnamon.
  2. Cover and cook on low heat setting for approximately 1 1/2 hours on high heat setting. Remove liner from cooker, if possible, or turn off cooker. Let stand, uncovered, for 30 to 45 minutes to cool slightly before serving. Remove stick cinnamon with slotted spoon and discard.

Note Mango juice may not be easy to find. We bought ours at Publix. Juicy Juice makes a mango blend that would work well if your store carries it. You could also check with your local health food store, which is where we bought our dried mango slices.
