Defeated by a lasagna?

Giveaway and Recipe
Laura has graciously agreed to give away one autographed copy of her book to one of our readers or listeners of the podcast. We have to limit this to entrants from the United States only, due to shipping expenses. Before we get to the giveaway entry form, Laura also shared a delicious favorite family recipe with us, Cinnamon Peach Muffins:

- 2 cups of flour
- ½ cup white granulated sugar
- ½ cup brown sugar
- ¼ cup butter
- 2 eggs
- 1 6 oz. container of fat free or low fat peach or pineapple yogurt
- 2 tsp. baking powder
- ¼ tsp. baking soda
- 1 tsp vanilla extract
- 1 peach (remove the pit; blend in blender with 1 cup apple juice so that it's liquid)
- ½ tsp cinnamon
- ¼ tsp. nutmeg
- ⅛ tsp. cloves
- additional apple juice
- confectioners sugar
- Preheat oven to 325 degrees.
- Grease a muffin tin (or use cooking spray which I prefer as it's easier).
- Mix all of the ingredients together less the additional apple juice and confectioners sugar.
- Add the additional apple juice only if your mixture is lumpy. It should be smooth - similar to a cake mix.
- Ladle the mix in the muffin tins.
- Bake in your oven until brown and firm to the touch (about an 1-1.5 hours depending upon your oven).
- Remove from oven and let cool.
- Sprinkle with confectioners sugar.
