Unsung Heroes … The Blessings We Miss

Chef John and I were talking about this guest’s story because it is a shining example of “Unsung Heroes” that do behind the scenes critical work, whether that be in the military, as in the case of Carol’s story, in another field of work or in everyday life. We pass by everyday heroes constantly, and how often do we miss an opportunity to learn something from them either because we just don’t know their story or because it simply may not grab onto our attention like the heroic stories that come from “the front lines”?

The Heroic Work of Carol Gee

I have to say I am so thankful for Carol Gee’s work in inventory and supplies for our Air Force. She humbly tells the story of what the Air Force did for her as a “runaway” (not the type of runaway you may think of when you hear that term…. listen to part 1 here for that part of the story!), but the even bigger “story” is how day in and and day out she joyfully and faithfully served in this position that was crucial to the success of the United States military.

You definitely want someone like her in that type of position. Imagine if you had someone who was not good at their job in this position? Managing inventory of equipment or parts and sending what is needed to troops is not something that can be taken lightly when people’s lives are on the line. I mean, I get that it’s the military and boot camp serves to “weed out” those who can’t make it, but you can tell from talking with Carol rather quickly that she is the type who goes above and beyond the “call of duty”.

The Recipe

The recipe Carol shared with us is a stir fry recipe, one of her favorites and a favorite of guests that return to her home after having eaten it on a previous visit! We are such big fans of Asian cuisine I know we will be trying this one soon.

Stir Fry Recipe: Yoka Soba

Summary: A vegetable, noodle stir-fry

Ingredients

  • Boneless pork chops, chopped into into small 1-inch strips (chicken can also be substituted instead of pork)
  • 1 green pepper, chopped
  • 2 stalks celery, chopped
  • 1large onion chopped
  • 2 large carrots, chopped length-wise and grated
  • 1/2 green cabbage, chopped
  • 3 scallions, peeled and chopped in 1/2 inch pieces
  • 1/2 cup soy sauce
  • ground black pepper, to taste
  • 1/2 package spaghetti noodles, cooked, rinsed and drained

Instructions

  1. Add in a 1/2 cup soy sauce
  2. Add in little ground black pepper
  3. Boil 1/2 package spaghetti noodles just as you would for spaghetti and drain well and set aside
  4. Brown pork in 1 table spoon vegetable or canola oil until nearly done
  5. Add green pepper, celery, 1/2 of the onion,1/2 of the scallions, carrots and soy sauce into meat; cook until green pepper soft/crisp
  6. Add cabbage and cook until cabbage tender/crisp
  7. Add in rest of onion, scallions, and cooked spaghetti, and stir all ingredients together well
  8. Add black pepper and additional soy sauce to taste

If you have listened to the podcast portion of this feature above, you know that Carol has become a successful author, with her work having been featured in Romantic Homes Magazine as well as magazines in her area, such as Atlanta Woman. Her first book, The Venus Chronicles, has been described by one of her readers as a “Girls’ Night Out just waiting to happen” with fun and humorous stories that women have been enjoying since it was first published in 2001.
