Sunbutter Raspberry Bars Recipe

Adapted from Peanut Butter and Jelly Bars on Cook Lisa Cook

Ingredients

  • ¼ cup coconut oil
  • ¾ cup sunbutter
  • ½ cup organic brown sugar
  • 1 teaspoon cinnamon
  • 1 Tablespoon vanilla extract
  • 2 cup Old Fashioned oats
  • ½ cup raspberry preserves

Instructions

  1. Preheat oven to 350F.
  2. In a microwave-safe bowl add the coconut oil & sunbutter and heat in microwave for about 40-50 seconds. Stir to combine. You will have a very runny liquid.
  3. Add brown sugar, cinnamon & vanilla extract and using a hand mixer, blend until combined and crumbly.
  4. Stir in the oats. It will seem crumbly and messy and may not appear to combine well but that’s okay.
  5. Line a 9×13 inch baking pan with aluminum foil and coat with a thin layer of coconut oil. Place ¾ of the mixture into the pan and press the mixture firmly, packing it down to create the base layer. Spread the jelly over the top of the base layer. Take remaining oatmeal/peanut butter mixture and crumble lightly over the top.
  6. Bake at 350F for 25-30 minutes or until toothpick inserted in center comes out only with jelly. As the bars sit for 5-10 minutes cooling, the jelly will firm up. The jelly that’s peeking through and on the edges will be bubbling and the bars may still look underdone, but they will continue to set up as they cool.
  7. Allow to cool completely before slicing. Store at room temperature in a sealed container.
