Gourmet Pizza with Salmon and Mango

Right after college, I worked in retail for a little while as an Assistant Manager at a Christmas gift shop in Blowing Rock, North Carolina. One of my fondest memories of working there, aside from the beautiful mountain environment around me every day, was eating gourmet pizza for lunch on occasion.

The gift shop was located on Main Street, and just like most downtown areas, there were some neat little restaurants to tempt the tastebuds of shoppers, tourists and those who worked in the area on lunch break every day. One of those restaurants happened to be a gourmet pizza place. That was probably my first experience with gourmet pizza, but I have never forgotten it. I wish I could remember what toppings were on my favorite pizza from there, but of course, I cannot. I believe it was tuna but that’s as far as my memory goes!

So when I decided on the pizza crust recipe for my Secret Recipe Club reveal for this month, I asked The Chef if we could make it a gourmet pizza. The result was phenomenal and loved by all four in our home!

Not to mention two of the ingredients are superfoods: salmon and red onions! So give it a try and let us know what you think.

Gourmet Pizza with Salmon and Mango

Delicious gourmet pizza perfect for salmon fans!
Ingredients
  • Freshly made gourmet pizza crust (see link in post above for the recipe)
  • ½ cup shredded salmon
  • ½ mango, peeled and diced
  • tablespoon bell pepper, julienne
  • teaspoon red onion, chopped,
  • tablespoon fresh basil, shredded
Instructions
  1. Arrange shredded salmon on pizza crust, followed by mango, bell pepper and red onion.
  2. Place pizza under broiler for approximately 60 seconds, watching closely until you observe salmon changing color. '
  3. Once all of the salmon has changed in color, remove pan from oven, arrange basil, cut and serve!
Notes
As noted in the recipe for the crust, this crust does not "hold up" like traditional bread crust. You will most likely need to eat this pizza with a fork, but once you taste the flavors, you won't care a bit!
