Beauty from Ashes “Back Story”!
For all of my fellow Secret Recipe Club members… please excuse the mess of our blog! As some of you may know, we had major tech issues just after last month’s reveal, and while we are thankful to have lost very little of our content, we obviously are still not completely “back to normal yet”. What a nightmare! I am not complaining though… it truly could have been much worse!
But in the midst of the chaos, an amazing Secret Recipe Club Reveal has emerged from the “ashes”! I’m so excited about this month’s recipe. I believe I had seen a recipe like it somewhere recently so this was the perfect opportunity for me to give it a try.
Although, I do have a confession to make as well. Don’t hate me. I did enlist The Chef’s help with this one. I was pretty stressed out over the issues going on with our blog. It was down for about two weeks!! Yikes!! Not fun.
So honestly, he really gets the credit for making this one. I picked out the recipe, told him the adaptation we were making, and he totally made it. I did do the photography, so I didn’t totally “bail”!
Blog Assignment for September
OK… so the blog I was assigned for this month was Daily Dish Recipes, written by Nicole Cook. She has been blogging about food since 2004, so you are sure to find something delicious you can’t wait to try on her blog!

Back to the recipe … it did not take me long to find the recipe I would try for this month’s reveal. She originally published it in 2008, but at the request of a reader, re-published it last year and it has been a reader favorite. We did leave out the 1/4 cup to 1/2 cup of pizza sauce, as tomato sauce doesn’t treat our son very kindly, but if you want to try it with that ingredient, just add it in with the others!
So without further ado… we present to you this month… Cauliflower Pizza Crust! If you are not a fan of cauliflower, I beg you to keep an open mind about this one!! The Chef is not a huge fan of cauliflower either, and there has been only one way our children have enjoyed it. But this…. this is a MUST try! Our children devoured it and asked for seconds. That is rare that both of them would love a recipe the first time enough that both want another serving!
Nicole has 5 KIDS and ALL 5 OF THEM, yes, even her 3 super picky eaters, request it regularly. I concur with her… it is THAT good!! Sold yet? 😉

- 1 cup cooked, riced cauliflower
- 2 egg whites
- 1 cup mozzarella cheese
- 1 teaspoon oregano
- 1 teaspoon garlic, minced
- parmesan cheese, if desired
- Preheat oven to 450 degrees.
- Rice your cauliflower following these simple steps: 1) Wash cauliflower and pat dry; 2) Chop into bite-sized pieces; 3) Place in food processor and process until rice-sized.
- Place riced cauliflower in microwave-safe dish and cook on high for about 7-8 minutes or so.
- Spray pizza pan or round baking pan well with non-stick cooking spray. (Not spraying well will make the crust hard to remove from the pan).
- In a medium bowl, combine the cauliflower, egg whites, mozzarella, oregano and garlic.
- Press evenly in or on the pan. Push it down into all corners, making sure it "sticks" well. Don't worry about it not being a perfect circle if you are using a pizza sheet with no edges ... you won't be thinking about its shape when you taste the flavor!
- Sprinkle with some parmesan cheese if you want some more flavor.
- Bake at 450 degrees for 12-15 minutes. You definitely want to check it at about the 12 minute mark and then allow it too cook for remaining time if needed.
- Remove the pan from the oven.
- [Note: This is where you would add your sauce and whatever toppings and cheese you are putting on it. **See below for a photograph and link to the gourmet pizza we made with it... yummy!!!** Place under a broiler for about 30-60 seconds, just until the cheese is melted. Watch it carefully or it will burn.]
Gourmet Pizza with Salmon and Mango
So when I knew this was going to be my recipe for this reveal, I wanted us to create a delicious gourmet pizza with salmon and mango with some combination of ingredients that would be perfect with the cauliflower flavor. This is not my specialty, but I consulted with the Chef immediately. He was at work and said, “Let me think about it.”
As usual, it did not take him long to come up with a suggestion, and as usual, I loved his idea. It was a big-time hit with all of us. We published this recipe as a parallel post to this one so that you can also try it along with the cauliflower pizza crust if you love these types of flavors.
So today, you really get two recipes instead of one.

We love cauli pizza too! On most recipes ive seen, they say to squeeze the heck out of the cauliflower to get rid if excess water to avoid soggy crust….I noticed on your recipe you don’t require that, isn’t it necessary? If not, one less step I guess!
I’m game to try this but I have a question. I have one child with an egg (&nut) allergy, specifically egg whites. What would you recommend as a substitute for the egg whites or is there one?
