This recipe came about by happenstance. The kids and I love meat gravy for breakfast. Our normal gravy is turkey sausage cream gravy over biscuits. It’s usually a weekend breakfast “treat”.
The Lucky Wife’s dad loves cream gravy made with bacon grease left over from frying bacon. I don’t care for it particularly, but every time we are at their house and bacon is made he asks me to make some.
His normal recipe consists of a little flour and milk and of course the bacon grease. To me, it needed more flavor. I improvised the last time we were there and snuck two pieces of cooked bacon off the platter, crumbled them, added some butter and onion powder and a little black pepper, and it was a hit.
This particular version with the beef bacon came about one Sunday morning when the kids wanted something different and I had about a half a pound of beef bacon left over from a previous recipe that I needed to use up. I made it and we ate it over Texas Toast, also from another previous recipe. As a whole, we prefer this now over traditional sausage cream gravy. Enjoy.

- ½ pound of beef bacon diced
- 1 stick of butter
- ½ teaspoon onion powder
- 2 tablespoons flour
- Approximately 3 cups of whole milk
- Brown crumbled bacon slowly over medium low heat in non-stick skillet until golden brown, extracting fat.
- Add stick of butter and melt slowly. Once butter has melted add flour and stir in, absorbing as much liquid as possible.
- Slowly add milk, stirring constantly. Simmer on low to medium heat until gravy thickens. Add more milk if needed. Warm through.
- Serve over open faced buttermilk biscuits or toast of your choosing.

now that is a unique gravy I’ve never seen before. How can I not have thought about a bacon gravy? My mom used to make gravy from left over hamburger grease all the time growing up as a kid. But it was never anything like this. I think I might actually like this gravy.

I will have to make this for my boys, I bet they would love it as they eat anything with Bacon. I think I am the only one out there that does not like bacon - my husband always says it is not normal not to like bacon but he does not mind as he gets more.

I did some research and found that beef bacon is made from the belly meat of a cow just as pork bacon is made from the belly meat of a pig. I have found at a high end grocery store. To be specific Gwaltney offers a commercially produced bacon. Our son is sensitive to pork and we grow tired at times of turkey bacon. I stumbled across this in the store and decided to try it. The flavor is great, but can overpower your gravy if you use too much. The research I found said that it is popular in health food stores.

I am gluten free, wheat free and grain free so the flour wouldn’t work however I could sub coconut flour and it might just work

Sure … try that! You never know and the flavor from the beef bacon I loved even more than pork.
