Peach Plum Granola Muffins

Serves: 6 (2 muffins ea.)
- ¾ cup milk
- ¼ cup melted coconut oil (you can use butter if you prefer)
- 1 egg
- 2 cups all-purpose flour
- ¼ cup sugar
- 2 tsp. baking powder
- ½ tsp. salt
- 1 medium fresh peach, diced (skin left on)
- ½ plum, diced (skin left on)
- ¼ cup granola, any kind
- Preheat oven to 400F.
- Grease muffin pans.
- Mix first seven ingredients together until just combined (milk through salt). Fold in peaches and plum.
- Divide batter into 12 muffin cups. Sprinkle each with a little granola.
- Bake about 20 minutes or until cooked through. Cool on a wire rack.
