Peach Plum Granola Muffins

Delicious fruity muffins with 50% less sugar!

Serves: 6 (2 muffins ea.)
Ingredients
  • ¾ cup milk
  • ¼ cup melted coconut oil (you can use butter if you prefer)
  • 1 egg
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 1 medium fresh peach, diced (skin left on)
  • ½ plum, diced (skin left on)
  • ¼ cup granola, any kind
Instructions
  1. Preheat oven to 400F.
  2. Grease muffin pans.
  3. Mix first seven ingredients together until just combined (milk through salt). Fold in peaches and plum.
  4. Divide batter into 12 muffin cups. Sprinkle each with a little granola.
  5. Bake about 20 minutes or until cooked through. Cool on a wire rack.
