Healthier AND Kid-Friendly Pizza Crust

MUST-try pizza crust, tested and approved by picky eaters, adapted from recipe by Daily Dish Recipes!

Ingredients
  • 1 cup cooked, riced cauliflower
  • 2 egg whites
  • 1 cup mozzarella cheese
  • 1 teaspoon oregano
  • 1 teaspoon garlic, minced
  • parmesan cheese, if desired
Instructions
  1. Preheat oven to 450 degrees.
  2. Rice your cauliflower following these simple steps: 1) Wash cauliflower and pat dry; 2) Chop into bite-sized pieces; 3) Place in food processor and process until rice-sized.
  3. Place riced cauliflower in microwave-safe dish and cook on high for about 7-8 minutes or so.
  4. Spray pizza pan or round baking pan well with non-stick cooking spray. (Not spraying well will make the crust hard to remove from the pan).
  5. In a medium bowl, combine the cauliflower, egg whites, mozzarella, oregano and garlic.
  6. Press evenly in or on the pan. Push it down into all corners, making sure it "sticks" well. Don't worry about it not being a perfect circle if you are using a pizza sheet with no edges ... you won't be thinking about its shape when you taste the flavor!
  7. Sprinkle with some parmesan cheese if you want some more flavor.
  8. Bake at 450 degrees for 12-15 minutes. You definitely want to check it at about the 12 minute mark and then allow it too cook for remaining time if needed.
  9. Remove the pan from the oven.
  10. [Note: This is where you would add your sauce and whatever toppings and cheese you are putting on it. **See below for a photograph and link to the gourmet pizza we made with it... yummy!!!** Place under a broiler for about 30-60 seconds, just until the cheese is melted. Watch it carefully or it will burn.]
Notes
This crust is not like a typical BREAD crust… it sometimes won’t stay together as well and will require a fork and a spoon, but once you taste it, you just won’t care. Never any guarantees, but trust us and give it a try!
