Pork and Feta Burgers

- 1 ½ pounds pork country-style boneless ribs, cubed and ground in food processor
- 4 ounces feta cheese, crumbled
- ¼ cup minced shallots
- 1 Tablespoon whole grain Dijon mustard
- 1 Tablespoon lemon juice
- 1 egg
- 1 teaspoon crushed sage
- ½ teaspoon lemon zest
- ½ teaspoon Kosher Salt
- Dash cracked black pepper
- ⅛ cup olive oil
- Place pork in medium bowl. Add the rest of the ingredients. Mix together with your hands until well combined.
- Form mixture into 6 patties and place on a plate.
- Preheat large non-stick skillet over medium heat. Once hot, add olive oil.
- Fry patties until golden brown and proper internal temperature is reached.
If you aren't crazy about pork, you could substitute ground turkey or chicken. Or try the original recipe with salmon.
