What better way to celebrate the start of deer season in my area than with a tasty new deer sausage recipe?! I’m always excited to see this time of year come back around when I can get back out into the woods.
I created today’s recipe after last year’s hunting season had ended. We had some deer sausage in the freezer and were ready for something new. This bake is a winner, with a great flavor combination from the sausage to the kale to the feta cheese, not to mention the potatoes.
Deer Sausage Recipe with Superfood Kale
For those who love superfoods and the recent emergence of kale as a popular healthy leafy green vegetable, you will not be disappointed in this dish! The Well-Fed Son and The Lucky Wife both loved it. The Well-Fed Daughter is still warming up to kale, so I’d say her decision on this one is not firm yet. 😉 I think the deer sausage was a little too spicy for her taste also.
Give it a try…. and enjoy!

- 1 pound deer bulk breakfast sausage
- 4 medium Yukon Gold potatoes, diced
- 5 cups kale, chopped
- 1 tablespoon garlic, minced
- 1 cup heavy cream
- 2 cups chicken broth
- 8 ounces feta cheese, divided in half
- kosher salt
- ground black pepper
- Preheat oven to 350 degrees.
- Brown crumbled sausage, remove from pan, drain and reserve drippings.
- Add kale and wilt.
- Add garlic and stir. Remove from heat.
- Place crumbled sausage in large bowl and add wilted kale, potatoes, heavy cream, chicken broth, half of feta cheese, salt and pepper. Fold together.
- Pour into 9x13 baking dish and bake one hour or until potatoes are fork tender.
- Remove foil and sprinkle with remaining feta cheese.

Definitely give it a try if you can … it should be healthier as long as they aren’t fed GMO corn or grains (some of the members of the hunting club where Chef John hunted last year would put out corn feed). I like it!
This is a unique twist to a bake recipe. It’s not often deer is brought out for a meal, but my FIL and his oldest son love to eat it!!

I will have to try this, so far the only way I like kale is in shakes. However with deer sausage that might just work - might have to try other sausage though as I am not sure where to get deer sausage.
Deer is so popular here. I remember my grandfathers recipes using it.

Chef John said he would not do Polish or smoked sausage but any other kind of sausage should work as a substitute, any that can be crumbled!

I am not a deer meat lover but I have a friend who will love this and I am sending it to her. I have gotten away from it since I moved from KY to SC (the deer here looks like dogs). Deer hunting season is something that comes around like Christmas in my old hometown.
