Discovering Corn Dog Muffins Broadened Our Lunchbox Possibilities

Trying to find new, different, fun and interesting lunchbox ideas is an ongoing challenge for me. When I came across the idea of corn dog muffins, I knew it would be a good recipe for The Well-Fed Son and that he would love them. Hotdogs and cornbread are two of his favorite foods.

We go with turkey hotdogs. They’re “healthier” even if just a little and he can hardly ever tolerate pork very well. The Oscar Meyer Selects have no artificial preservatives or by-products, so that in and of itself definitely makes them healthier.

The first time I saw these was on another blog, and we made them just as shown in the photo there, with the single hotdog in the middle of the muffin. Then The Chef decided to try cutting the hotdogs into bite-sized pieces to be spread throughout the inside of the muffin. I liked that idea better. You get the flavor of the hotdog throughout the whole muffin, rather than just in the center!

They were a hit!

The Well-Fed Son loves these. The Well-Fed Daughter just recently began eating a little corn, as she did not seem to be tolerating it well before. She should be able to try them soon, and I suspect she will be just as much a fan as her brother, as she likes hotdogs as much or more than him. Her picky eater tendencies will not likely be an issue with these!

Recipe: Corn Dog Muffins

Corn Dog Muffins

Ingredients

  • 1 box Jiffy cornbread mix
  • 2 hotdogs

Instructions

  1. Cut hotdogs into bite-sized pieces by cutting lengthwise in half and then slicing each half into pieces.
  2. Prepare cornbread mixture as directed on package.
  3. Stir into mixture the hotdog pieces.
  4. Line muffin pan with aluminum foil muffin cup liners.
  5. Pour cornbread/hotdog mixture into each liner, filling about 3/4 way to the top.
  6. Bake according to package instructions. Remove from oven. Remove each muffin from the pan, leaving in the liner, and sit on cooling rack until well cooled. Store in refrigerator (or freezer) until ready to serve. When storing in freezer, we individually wrap with saran wrap.
