The Fried Okra with Tomatoes Recipe That Was Her First Pregnancy Craving

The Lucky Wife has never been a fan of okra, until she tried this Fried Okra with Tomatoes recipe. It even became her first craving when she was pregnant with The Well-Fed Daughter. Interesting first craving, but I’ve definitely heard of some even stranger. She had only eaten it deep fried, probably the most common way it is prepared in the South. She loves tomatoes and likes the flavor combination.

Me on the other hand? I much prefer the deep fried okra… but would you really expect any different from a country boy like myself? Enjoy.

Fried Okra with Tomatoes
Ingredients:
  • 16-ounce bag of frozen cut okra
  • 1/2 cup chopped sweet onion
  • 2 diced vine-ripened tomatoes
  • olive oil
  • salt and pepper to taste
Instructions:
  1. Steam okra in a covered microwavable casserole dish for approximately 3 1/2 minutes or until al dente.
  2. Heat large non-stick skillet over medium-high heat until hot. Add olive oil. Drain excess water off of okra and add to skillet. Saute approximately 1 minute or until heated through.
  3. Add onion. Saute util onion soft.
  4. Add tomatoes. Toss and combine thoroughly.
